Flourless Chocolate Torte

I found this recipe once upon a very long time ago on the Chef2Chef Culinary Portal. The recipe has since disappeared from there, so I am sharing it here. You will need a hand-held mixer for this - your KitchenAid is beautiful, but not helpful here. Instead, take a stainless steel mixing bowl and put it over any pot of boiling water (that it doesn't fall into).

I usually keep potato starch in the house - use it 1:1 instead of corn starch. I have not yet tried this with coconut oil instead of the butter to make it parve, but I imagine it would work perfectly. If you find the ganache too heavy for the glaze, dust with superfine (confectioners) sugar and top with berries or edible flowers.

Flourless Chocolate Torte

Makes:  16 Servings

Preheat:  325°F

Ingredients

3 oz unsweetened chocolate

5 eggs

1 cup sugar

1 cup melted, unsalted butter

3 oz semisweet chocolate

¼ cup sifted cornstarch

½ teasp vanilla essence

3 tbsp orange liquor (optional)

Glaze

6½ oz semisweet chocolate

2 tbsp butter

⅓ cup heavy cream

Method

1. Over hot water in top of double boiler, beat the eggs and sugar until mixture is very light and almost white in color.  Remove from heat.

2. Meanwhile, melt the butter and skim off the foam.  Return to heat and melt in chocolates.  

3. Beat the sifted cornstarch slowly into the egg mixture on low speed until thoroughly blended.

4. Stir the vanilla and orange liquor into the chocolate mixture and then into the egg mixture.  Spoon into a 10-inch springform pan that has been greased and floured.

5. Bake at 325°F for 20-25 minutes, until torte pulls away from sides of pan.  Knife inserted in center will NOT come out clean!  DO NOT OVERBAKE!  Cool in springform pan.  Remove ring.

6. To make glaze, melt chocolate and butter with cream and spoon over cooled torte.  Refrigerate and chill completely.

Testing

I am trying out Adobe Contribute CS4 and right now I hate it. I'm not sure why this is ANY easier than learning HTML... It doesn't seem to have CSS support, or a way to easily add Javascript, so how is this useful? Not sure...
